Ingredients
1 cup uncooked quinoa
1 avocado, diced
1 cup shelled edamame, cooked (You can use frozen peas instead.)
1 14-ounce can garbanzo beans, drained and rinsed

Ingredients for the scones
1/2 cup canned pumpkin
1 large egg
3 tablespoons heavy cream
1 tablespoon molasses
2 cups flour
1/4 cup + 2 tablespoons brown sugar
1 teaspoon baking powder
1/2 teaspoon baking soda
2 teaspoon cinnamon
3/4 teaspoon cloves
1 stick cold butter

Preheat oven to 350 F. In a large bowl, toss mixed nuts with melted butter and maple syrup.
