Green Goddess Quinoa Bowl

A Deconstructed Healthy Recipe

Ingredients

1 cup uncooked quinoa

1 avocado, diced

1 cup shelled edamame, cooked (You can use frozen peas instead.)

1 14-ounce can garbanzo beans, drained and rinsed

1 large bunch kale, leaves removed from stems and roughly chopped

1 tablespoon olive oil or coconut oil 

2 cloves garlic

For the Green 
Goddess Dressing

1 avocado

2 cloves garlic

2 tablespoons organic apple cider vinegar 

2 tablespoons lemon juice

2 tablespoons water

1/3 cup olive oil

1/3 cup walnuts or cashews 

1 cup herbs (basil, cilantro, parsley, chives—whatever you have on hand or like!)
